What I Eat in a Week: Oatmeal, Smoothies + French Fries



Hey Merbabes! I recently did a poll on my story to gather inspiration for my next blog post.  The overwhelming winner of said poll was 'what I eat in a week'! So here we are. I kept starting then stopping tracking my daily food intake because I was a little shocked by the amount I ate when it was written down on paper.  On Monday I decided to finally commit, I tracked everything I ate Monday-Friday and I am excited to share with you all!

A little background on my diet, I have been completely vegetarian for over five years now, meat wasn't a large part of my diet growing up so I don't miss it.  I keep my dairy intake on the low, it gives me headaches + pimples, so I save dairy for special occasions, like Jeni's Ice Cream + Kelly's (thats my mom) mac + cheese.   I truly believe in listening to your body for the answers to your dietary needs! When you listen to you body there is no need for unnecessary restrictions or counting calories.

With that being said, lets jump into day one!

Monday:

Breakfast: Oatmeal. I eat the exact same breakfast everyday.  Everyday.  Steel cut oats with chia seeds, flax seed, apples, banana + pineapple.  Topped with berries + mango.  It's a lot of food + it's my absolute favorite way to start the day.

I also drink a cup of hot lemon water + hot green tea with my oatmeal.

Rehearsal Snack: Dance rehearsals run right through lunch time so I always have a smoothie with me.   Monday's smoothie was made with frozen blueberries, raspberries, strawberries, beetroot powder, Garden of Life Plant Protein Powder, and Forager cashew milk.

Lunch: Monday's I usually get home after 2 + make myself a quick leftovers lunch.  This week I was truly blessed by a fridge full of Easter leftovers.  I had dairy-free egg strata loaded with veggies + diced sweet potatoes.

Dinner: Monday night dinners are my favorite of the week, because its rice + beans night.  I had brown rice, black beans, corn, avocado, and salsa!

Snack: Since I did a late afternoon SoulCycle class I was hungry again a few hours after dinner.  I had peanut butter + jelly toast with my nightly cup of tea.

Tuesday:

Breakfast: Oatmeal.  See above.

Smoothie: frozen blueberries frozen banana, spinach, arugula, kale,  Garden of Life Plant Protein Powder, Vital Proteins Matcha Collagen, + Forager Cashew Milk.

Lunch: I had a lunch date with momma at True Foods, one of our favorite spots!  We ordered cauliflower to share +  I ordered my go-to ancient grain bowl.  The grain bowl is topped with glazed sweet potatoes, snap peas, onions, mushrooms, and the best cilantro pesto.  With my grain bowl I ordered a cup of Ginger Tusi Tea, its the warmest, coziest cup of tea out there.

Dinner: For dinner I threw red peppers, mixed greens, avocado, + salsa over leftover brown rice.  I love rice!

Snack: Oranges, dark chocolate, cup of tea.


Wednesday:

Breakfast: Oatmeal. Duh.

Lunch: Sandwich with homemade hummus, mixed greens, red pepper, pickled carrots + onions. Sandwiches are a staple in my diet, I will never get over how good a PB+J is.

Dinner: Snuck over to Bad Hunter for an early dinner.  This obviously consisted of their to die for veggie burger (sans cheddar) + fries!

Snack: Apples + oranges with a cup of tea.

Thursday:

Breakfast: You already know.

Smoothie: Same as Tuesdays!

Dinner: Whole wheat pasta with kale, zucchini + walnut pesto, ugh to die for.  I just had a bowl of leftovers while writing this post.  Pasta is my favorite food, I could eat it every single day.

Snack: Apples, oranges, dark chocolate with a cup of tea.

Friday: 

Breakfast: Oatmeal!

Smoothie: Peanut butter, frozen banana, blueberries, arugula, spinach, Vital Proteins Matcha Collagen, Garden of Life Plant Protein, + Forager Cashew Milk.

Lunch: Hummus with carrots, tomatoes, crackers + pretzels!

Dinner:  Urbanbelly at home, obviously I had my favorite rice + veggie bowl with tofu.  This bowl is jasmine rice topped with arugula, eggplant, kimchi. cucumbers, tofu, spicy sauce, and the perfect soft boiled egg.  I can't go longer than five days without consuming this bowl.

Snack: Homemade matcha chocolate, find the recipe on Instagram!


That's what my week of meals looks like.  This was a pretty basic week for me, and one where I ate pretty clean!  To be honest the week before was filled with ramen + tacos + I have no regrets! Balance + moderation is key. Eat well +  Eat lots!

Have you ever had brunch on a rainbow boat?  Well, I have + it was amazing.  You'll pretty much become an honorary blogger after visiting a spot as cute as this one.

Good, clean, beautiful food.  They have everything from avocado toast + gluten free pancakes to açaí bowls + lattes in every color of the rainbow.  Plus theres a cute French guy that works there.

Its v rare I sit down + eat a box of pastries, like I don't think I've ever down that before.  Until I went to Maitre Choux + became the queen of eclairs.

Salty or sweet, with your choice of dips.  Sign me up over + over again.  This is a brilliant concept that I pray on the daily someone will steal + open in Chicago.

See London like a Mermaid: Breakfast + Afternoon Tea at Sketch


Forget Disney World, Sketch is truly the happiest place on earth.  I'm a total sucker for an insta-famous destination and will do anything for the #content so Sketch was an absolute must on our London to-do Pinterest board.  On our first full day in London we were #blessed enough to have breakfast in the Parlor.

As you enter Sketch, you are greeted with neon lights + holographic images of major icons like Kate Moss and of course, the queen.  We were then led to the front room which is...you guessed it, the Parlor.  I immediately died when I noticed that the legs of the chairs were all wearing pointe shoes, I felt right at home.  Our breakfast consisted of us eating basically everything on the menu + snapping tons of pictures (watch it go down here).  I ordered a fried egg, and it was literally a fried egg, WILD.  After breakfast, we ventured to the bathrooms.  No they were not the pods, that comes later.  These bathrooms were interior #goals, they are completely decked out in swarovski crystals. LUXURY!  Aubrey and I spent around 20 minutes taking selfies + kirakira videos, which is slightly embarrassing considering the bathroom is quite small and there were people waiting outside the door for us to leave, oops.

Of course, the main attraction at Sketch is their afternoon tea and after the fabulous breakfast we had we couldn't wait to see what they had in store.  We went to Sketch for tea on New Year's Day (watch our full day here), lets be real, can you think of a better way to ring in 2018? I can't. We snagged the first seating at 11:30am, which is a major key because we got to enjoy the space before it completely filled up.  Our waiter was a major cutie and suggested we started out with some matcha, we knew right then we were in good hands.  Since Aubrey + I are extra special girls, we got two beautiful tea towers, one vegetarian + one gluten-free, vegetarian.  It was three layers of pure joy, and although it was a difficult task we each managed to completely clear our towers.  After tea towers came scones, which despite our overwhelming fullness we continued to plow through.  I still can't fathom how someone could continue to eat but if you're a real star you get to enjoy lovely pieces of cake to finish your tea time.  We sealed our tea time with a pot of rose tea, one of my favorites!

Ok so now is where things get exciting.  The bathrooms. The Pods. The Art.  If you haven't seen these bathrooms you've clearly never been on Instagram before.  That white room with the rainbow ceiling is the bathroom at sketch!  You get to pee in a pod! V chic.  


So I guess all of this is to say, go to Sketch.  It's basically an Instagram theme park, and the food is pretty good too.

Snapshots from Self-care Sunday with Beauty Now


Hey Merbabes! Last weekend, I treated myself to the ultimate self-care Sunday.  I started my morning at Dreamdry in Lincoln Park for a blowout.  I love rocking my waves on the daily but for me, sleek, fresh locks are the ultimate confidence boost.  I booked my appointment through the Groupon app, simply click on "salon and spa booking" at the top of the app, then I searched through tops spots in the city and decided on Dreamdry for it's ultra chic design.  This seemed like the perfect spot to start my self-care Sunday.

Once I chose my destination, I booked my chair and paid online.  I had been anxiously waiting for my self-care treat day all week and woke up Sunday ready to start my day.  I threw on a black turtleneck + jeans, my winter uniform, then piled on accessories, including my new circle purse(!!!) to help me feel a little more glam.


I booked my appointment through the Groupon app, I was led directly to book when I chose salon + spa, and was able to select my treatment and salon of choice.  Since I am a GenZ who despises talking on the phone, this app is my new BFF.  I literally booked, confirmed, and paid all on my phone.  No need to talk to a real person ever again, JK but totally not.  

Once my hair was all shiny + smooth, I walked right out the door and on my way.  I don't know about you babes, but when I pay for something online I feel like I have gotten it for free.  I completely forgotten that I had paid for my blowout earlier in the week, which made me love my hair even more.  


Since I left the salon Sunday, I have been scrolling through the app looking for my next treatment.  I am in desperate need of some relaxation. Summer Refresh with Spindrift


Hey Merbabes!  Although fall is quickly approaching I have been soaking up every last bit of summer.  To be honest I have probably been enjoying myself far too much, I have been seriously slacking on my usual work load, but I am trying to remind myself that a little fun never hurt anyone, right?  Anyways...I am here to chat with you about my latest bubbly obsession, Sprindrift Sparkling Water.

Sprindrift sparkling water has been my drink of choice lately for these late summer days.  I was lucky enough to get hooked up with this ultra refreshing package of goodies, sent over from the Spindrift team.  




At the beginning of the month I signed up for an unlimited yoga pass, so my days have been starting at 6 am with power yoga, after yoga I always grab a matcha and head home to get ready for the day.  From there my day usually consists of social media planning, content creating, and heading to meetings, lately I've been breaking my days up with lunch dates and ballet classes.  My friends are heading back to school soon so it is the perfect excuse for me to take an extra long break in my day and get a little ladies lunch in.  After lunch, I do a little more work and a little more play, august has been full of exciting events around the city, and I do my best to attend every single one.

I can't say I'm complaining, its been quite the ideal lifestyle but being a social(media)lite does get exhausting.  I am out of the house for what seems like 16 out of 24 hours everyday so I carry my life in my tote bag.  The latest staple in my bag has been a can of Spindrift, it is the perfect mid-day refresh.



Spindrift is sparkling water + fruit, thats it.  My beverage diet is usually matcha, and water, so Spindrift is the ultimate summer treat!  There is no added sugars or ickiness just pure fruit in sparkling water, just how I like it.

Spindrift comes in multiple flavors, one for every mood.  Grapefruit and Orange Mango are my current favorites, but only because I have pink and orange paper straws to perfectly match the cans.  No shame in a good color coordination.

Ultimate Guide to Lollapalooza + Bed Head Hotel Invite

1.  Nail Your Lolla Look

Obviously the main reason I go to any event is for the look.  Lollapalooza is practically the culmination of everything I hate the most; sweaty, drunk, people and standing in the direct sunlight. Not usually my vibe, but sprinkle in the element of endless outfit possibilities plus street style photographers and I'm in.  Obviously you will have to stay tuned for today's look, but you know I will be looking extra.

Your outfit is a vital part of the Lolla Look but so is your beauty look.  My largest struggle when it comes to festival beauty is finding the perfect balance, I always want to rock a crazy glitter-eye but I also know by hour three or four, that glitter-eye will become a glitter-mess all over my face.  This year I am planning on going for a simple and natural makeup look and let my killer waves do all the talking.

2. Pack the Perfect Bag

I really commend you if you are able to just throw on your wristband and head out the door.  I, on the other hand have a full bag packed with everything I could possibly need throughout the day.  I am planning on taking my favorite sparkly pizza purse and packing it as full as humanly possible.  Number one on my festival packing list is always GIANT sunglasses. Not only for sun protection, but with giant sunnies you can hide your face in the event you run into people from middle school, which I always seem to do.  In addition to sunglasses, I also recommend a chic plastic visor or another form on sun protection, like a dad hat.  Always pack water and a snack or three, staying hydrated is a major life key but even more major during a festival weekend.  Plus, food lines will be long and you will get hangry.

I also like to keep lipstick/lip balm, ID, bandaids, and depending on the size of my bag, a jacket for after sunset.

3.  Take Advantage of Every Event

I am so excited for Lolla weekend and I am only going to be at the actual festival one day.  Trust me, I am planning on taking advantage of all the craziness happening throughout the weekend and making it a four day experience despite my one day pass.  There are so many official after shows that are not to be missed, I am most excited about seeing Banks at her official after show.  If you really love an artist that is going to be at Lollapalooza, the best way to see them is at an after show in a smaller more intimate setting.

Get Your Glow: Beauty Rose Tea Latte


Hey Merbabes!  I am always on the hunt for a magic potion that will clear up my skin, make my hair shine, and give me an all around glow.  Well, I found it, even better I made it myself, and so can you. This Rose Tea Latte is made with Tulsi Rose tea, Beauty Dust by Moon Juice, and Coconut Milk for the ultimate, vegan, beauty-drink, plus it tastes divine.  

What you need:





To make this latte, all you need is Rose tea, Beauty Dust, and Coconut Milk.  I used this Tulsi rose tea for the amazing healing properties found in Tulsi.  Tulsi is an adaptogenic herb, adaptogens help the body adapt to stress by normalizing levels of stress hormones.   Moon Juice is a company that creates adaptogenic goodies such as their moon dusts, I recently got the sampler pack with two of each moon dusts.  For this recipe I used the beauty dust because I am all about getting my glow on, but you could use any other dust as well!


I began this latte as you would any cup of tea, I filled a mug about half way with hot water then added my rose tea bag.  After the tea steeped, I added in a packet of beauty dust, and stirred it up until the dust was dissolved.  



I let my tea cool since I wanted a refreshing drink for this summer day, then I relocated my beauty tea into a larger glass.  Then, I poured in the coconut milk; I used full-fat coconut milk because I adore how thick and creamy it is. You could substitute coconut milk for any of your favorite non-dairy milks.

Content Heroes: Instagram Accounts to Follow



Hey Merbabes!  Instagram takes up about 90% of the space in my brain on a daily basis, I'm not talking about mindlessly scrolling, even though I totally do that,  I'm talking strategizing, planing content, discovering new accounts, and new trends.  Even with all of that going on, my favorite hobby is finding cool new people to follow on Instagram.  I love content, and I love following people who create sick content, simple as that.

Instagram is my favorite place to gather inspiration, whether I'm looking for a new place to brunch, a new look, or a new cool girl to give me some life inspo, I know I'll find it on the gram.  I like to fill my feed with cool, inspiring people so that even when my day sucks and I'm annoyed with the world I can head over to the happy-land of Instagram and remind myself why I do what I do.

Don't be fooled by his perfectly dreamy interior Instagram feed.  Orlando's Insta-stories give me life. I have laughed out loud in public countless times while watching his stories, with everything from Jeans for Teens to daily news updates, to my personal favorite "Cooking for Rich People" a segment where he attempts to make healthy meals, his stories are pure joy.  Follow him RN.

 Kristie Dash is one of the few people on this planet that I feel loves #content as much as I do.  Her content is always on point and is almost painfully relatable, I feel like we were one in a past life.  Plus, she has had literally everyone of my dream job's from being my favorite human's (Eva Chen) former assistant, to a magazine beauty editor, to former editor in Chief of Obsessee, she is basically ruling the social media world.

Cyndi is the founder of Taste the Style, one of the coolest editorial sites around, and Chillhouse the coolest destination to chill out in NYC.  I have been following her for a few years now am I constantly inspired by everything she does.  She is a well-spoken, smart lady that is beyond talented and effortlessly cool, basically everything I aspire to be.  Plus, her and her husband are super dreamy and serious #relationshipgoals, that means a lot from the girl who gags at the sight of people holding hands in public.

Just a Taste: Museum of Ice Cream Photo Diary



Hey Merbabes! I have been dying to get into the Museum of Ice Cream for almost a year now.  I first tried (and failed) to get tickets while I was in New York for Fashion Week last September.  I actually stood outside the doors of the museum in the midst of all sprinkles, it was a sad scene.  Then, the Ice Cream Museum moved to LA and extended their dates to the time I was going to be in town, hashtag blessed.  I honestly felt the same level of joy getting Museum of Ice Cream tickets that I did when I got cheap Beyonce tickets the afternoon of her show.

The Museum of Ice Cream was pure joy.  It was a sensory overload with touch, tastes, and all the colors you could ever dream of.  It was less a museum and more a next level fun house.  I'm going to stop talking now and you can see for yourself.

What is Mermaid Waves: A (Self) Love Story



Hey Merbabes!  I am back home from LA and am feeling completely refreshed and renewed.  To be honest if I didn't have to leave LA I never would have, it was two and a half weeks of pure inspiration and joy.  While I was away I had a lot of time to think and reflect on what Mermaid Waves really means to me.  Why it matters, where I see it going and how it is going to get there.  I love sharing (and oversharing) with you babes, so I am excited to give you a glimpse of what has been running through my head these past two weeks.


Lets start from the beginning.  I get asked "what the heck is Mermaid Waves" daily.  Mermaid Waves began as my Instagram username about six or seven years ago, @mermaidwaves seemed like the natural choice as I had long, wild, and wavy "mermaid" hair.  Get it? Good.  From that point on most of my friends changed their wacky instagram usernames and switched to simpler handles like their first and last name, but @mermaidwaves became more than just my username.  More people called me Mermaid Waves than they called me Dani so it stuck, and has continued to stick with me.  It has gotten to the point that when I introduce myself to someone my initial reaction is to say my name is "Mermaid Waves".



When I started high school, I posted my outfits on the daily to my Instagram page.  I was lucky enough to go to an arts high school in the city and felt that I could truly indulge myself in my love for fashion.  There were no small-minded suburban kids to make fun of me, just a bunch of weird arts kids that appreciated my form of self-expression.  As my Instagram continued to grow and my #OOTD photos racked up likes and reposts, I decided to expand Mermaid Waves to another medium, a blog (which is where you are now, in case you are lost).

Mermaid Waves truly started as a form of self-expression and self discovery, if you take a look through the archives you will see so many versions of Dani.  Dani who only wore skirts, Dani who thought she wanted to be preppy (that lasted about a week), Dani who wore a lot of eyeliner.  These moments have all accumulated to create the strong sense of style (and self) I have now.  Although I always felt that I was the truest form of myself as @mermaidwaves, I always carried this overwhelming need for perfection.

The need to be the perfect Instagram it-girl.  When people visited my blog or Instagram I wanted to first thing they noticed was that I was skinny and pretty.  I know that sounds awful, but I also know I am not the only person who has felt (or still feels) this way.  There is such a pressure to feel like you have to have the perfect outfit, and the perfect face, and the longest legs; for a while that is how I thought I would make it big.  I wanted girls to visit Mermaid Waves and want to be me, want to look like me, and wear what I was wearing.  That is what you are expected to be as a blogger, a perfect idea of a person that will make other people want to learn, shop, or listen to you.



As I have gotten a little more mature I realize how disturbing that all sounds and how off from my lifestyle that truly is.  I hate nothing more than listening to people, and god forbid anyone compares me to anyone else.  I am my own person in every way and I realized that is far more important to me than being a "perfect" form of a person.  When someone looks at my Instagram I want them to see how confident and fun I am, and if they think I'm hot, that is just a bonus.  I live an insanely cool life, because I have created that lifestyle for myself.  I could have easily gone to college or continued my ballet training and played things safe, but I decided that I have so much more in me than to work in an office or stand in the back row of the corps de ballet.

That is what I want to accomplish with Mermaid Waves, I want you to feel empowered to create your dream life.  I could care less if you ever purchase an item that I wear, or if you try out a new trend.   That ranks so low on my list of things I want to accomplish in this world.  I will always continue to offer up fashion advice and inspiration because that is a part of what makes me who I am, but I would rather you leave Mermaid Waves feeling like you have a gained a new sense of confidence and are inspired to take on the world.

I know I just rambled a whole lot, and things got kind of deep but I think I brought it all back to the surface.  Mermaid Waves has been a story of self discovery and self-love for me, and now I want to reflect that back on to all of you babes.  I want you to learn as much about yourselves from Mermaid Waves as I have learned about myself over the past seven years.  Whether that is as simple as I tried boyfriend jeans and I hate them, or as deep as feeling empowered to change aspiration in life.

With that being said, I am looking to incorporate some new voices on Mermaid Waves.  Whether you want to share about fashion, self-love, fitness, or something else.  If you would like to be a contributor for Mermaid Waves, please send along pitches / pieces that you feel would fit MerWaves voice and mission.
